  • 100 gr of Sorana minced meat
  • 100 gr of pullet minced meat
  • 2 fresh eggs
  • 15 gr of breadcrumbs
  • 20 gr grated fresh parmesan cheese
  • 20 gr grated fresh pecorino cheese
  • Onion to taste
  • Carrots to taste
  • white wine to taste
  • pink salt to taste
  • milled pepper to taste
  • extra vergin olive oil to taste
  • 25 gr of breadcrumbs for breading
  • Corn flour to taste
  • Spelt flour to taste

Instructions
  1. Brown the meat with the fried vegetables and a spoon of EVO oil until they become slightly browned in surface
  2. Finsh the meat cooking for 5/10 minutes, deglacing it with white wine and adding pink salt
  3. Allow it to cool and then place it in the blander, adding eggs, permesan and percorino cheese and mix all the ingredients
  4. Create with the mixture little balls and place them into the ORGANIC GREEN OLIVES trying to fill them to the best
  5. Once filled, dip them in the spelt flour, then in the beatene gg with pink salt and, in the end, in the breadcrumbs and corn flour mixture
  6. Place olives in a baking tray covered with baking paper and baste them, with the help of a pastry brush, with EVO oil
  7. Bake in a static oven for 25 minutes at 180 ° degrees and then grill for 3/5 minutes until the desired browning is achieved. ENJOY YOUR MEAL!!
