Risotto with ORGANIC ARTICHOKES WITH STEM and crescenza (cheese)

Ingredients
  • 140 gr Carnaroli or Arborio Organic rice
  • 3 spoons of extra virgin olive oil
  • vegetable broth (1.3 liters of water + 1 carrot, celery and 1 onion)
  • 2 ORGANIC STEM ARTICHOKES
  • 50 gr fresh growth

  • 140 gr Carnaroli or Arborio Organic rice
  • 3 spoons of extra virgin olive oil
  • vegetable broth (1.3 liters of water + 1 carrot, celery and 1 onion)
  • 2 ORGANIC STEM ARTICHOKES
  • 50 gr fresh growth
Instructions
  1. Heat the oil in a saucepan and toast the rice for about two minutes, add the broth one ladle at a time until the risotto is cooked, stirring gently with a wooden spoon for about 18 minutes
  2. Take the two artichoke stems and cut them into slices, add them to the risotto during the last five minutes
  3. When cooked, stir the risotto with the crescenza cheese and serve decorating with the artichokes
